I recently did a presentation at SAIT on Edible and Medicinal Plants. Chef Simon Dunn provided me the following recipe:

Easy Sauted Dandelion Leaves

An easy way to add some local fresh greens to your meal.

The best dandelion leaves are found in the shade, before the flower stem has started to grow. In fact if you see a tiny flower bud at the center of the leaves that is the latest to pick the least bitter of the leaves. Make sure you know the area where you are picking from to ensure chemicals have not been sprayed on them.



Saute dandelion greens in olive oil with Shallots
After 3 or 4 minutes, add a splash of red wine vinegar.
Turn down heat for a minute or two and serve!
